Back in my single and carefree days when I didn’t have to worry about toddler naps and an always prepared diaper bag, I loved going to Olive Garden. I would order their budget friendly option of the endless supply of all the soup, salad and bread I could eat- plus a server hovering at my elbow to top every part of my meal with freshly grated parmesan cheese? Perfecto! Nowadays restaurant meals out are nice on occasion, but I’d much rather cook up my own favorites at home where I know exactly what goes into each meal and I can tailor it to the taste of my family. Plus it saves a ton of money! Win, win, win!
This Zuppa Toscana soup is also a favorite way to get some of my favorite kale greens into my husband and kids! This soup is delicious, budget friendly, and easy enough to make every week. Pair it with a healthy salad and perhaps your favorite bread and this meal is a keeper!
Update: My family eats dairy, but I do not. I pulled a portion of the soup out (before adding heavy cream) and added a few spoonfuls of my homemade Cashew Cream and YUM!
