Pasta salads are great for picnics, potlucks, BBQ’s, or just a quick lunch or dinner you can make ahead and keep in your fridge. They also are a wonderful way to integrate a ton of healthy vegetables into your meal. This salad is fresh and delicious and will be one of the bowls that is scraped clean at the next gathering you bring it to! I guarantee it!
First cook your pasta al’dente according to the package directions: I used a veggie pasta that my kids love. You can easily substitute your favorite gluten free pasta. Toss it in a serving bowl.
Next- if you are using asparagus, prepare it and stick it in some boiling water and then ice water to get a nice blanch.
It takes away the “raw” texture but preserves some color and texture:
This is my usual cast of characters. I keep these items on hand whenever possible and they are so bright and fresh. Throw them in the bowl too.
Look how beautiful it is once you get all those delicious veggies in there! Throw in the feta, optional cooked chicken, some lemon zest and juice and your favorite italian dressing and it is done! Yum!
