I love leftover white rice when it is a day old and is all hard and crunchy. You think I’m joking, right? Nope! I’m being perfectly honest, no sarcasm this time. Leftover rice is PERFECT for making fried rice. Fried rice is one of my favorite dishes to make to utilize any leftover rice, meats, and sad and somewhat shriveled veggies that were forgotten in the refrigerator. We all have them….. limp celery stalks, onion halves we don’t remember when we put them in there, carrots that are starting to dry out…. yep! Those are all perfect for this fried rice. I guarantee this will quickly become a staple recipe in your family too. It also can be a perfect meatless meal and if you add enough eggs and top it with some chopped peanuts- it is still full of lots of protein and can fill you up.
In my goals of eating healthier and less carbs, I tend to put in at least as many vegetables as I do rice. It makes for a nutritious meal with plenty of color, texture, and crunch. As most of my recipes are, this one is super flexible so play around with whatever meats and veggies you have on hand. I generally do onion, carrot, celery, colored peppers, and green onions make a fantastic garnish if you have them!
