My sister-in-law Amanda is a cheese connoisseur and she shared this fun and easy appetizer with me a long time ago. It is essentially a three ingredient appetizer and although incredibly simple it is still sophisticated enough for any party! Don’t let the garlic scare you off! When it is roasted garlic becomes soft and spreadable and very mellow in flavor. Combined with the crunchy baguette and the creaminess of the brie, it makes for a yummy appetizer!
Have you seen one of these? It actually was a gift from Amanda to help me learn the art of garlic roasting. It is not necessary to roast garlic, but it is rather fun to have a terracotta pot just for my garlic!
Grab your whole head of garlic and place it on your roaster or in a oven safe dish. Drizzle the top with some olive oil and sprinkle it with salt and pepper. If using a roaster just put the lid on. If not using a roaster I would wrap it loosely with some foil. I wrapped mine in foil too because my head was falling apart, something I have in common with it lol! Always losing my head too… 😉
Pop it in the oven (I put my roaster on top of a baking sheet to make it easier to remove from the oven later).
Bake at 400 degrees for approximately 1 hour. You will know it is done (or close to it) when you begin to smell it. When it is properly roasted the garlic cloves will no longer be hard but will be spreadable, like butter.
Meanwhile, prepare your baguette by slicing it into rounds and if it is a small batch just toast them in your toaster oven. If it is a large batch (like a whole baguette loaf) place them on a baking sheet and toast in your oven until lightly browned and crisp.
Prepare your bri cheese by softening it. You can do this either by placing it in the microwave for about a minute (gasp!), or if you aren’t a fan of that route, place it in your warm oven to allow it to soften.
And this is what I meant by garlic being “spreadable” yum!
Now layer on the softened bri and sprinkle with some salt and pepper and it is perfecto!
