If you don’t know how to roast vegetables you are seriously missing out on some goodness! It is a simple concept, but I have a close friend who keeps asking me about it (Jennifer!) and I want to make sure to share this simple but tasty cooking method. I am making my potatoes simple with just some oil, salt, pepper, garlic powder, and a sprinkling of thyme. You can use whatever seasonings and herbs that suit your taste and best compliments the meal they will be served alongside. I saw Ree Drummond made some roasted potatoes with taco seasonings. I have not tried it yet but it sounds super kid friendly and tasty. Have fun and get creative with these!
Here’s what I did:
Washed 4 russet potatoes and sliced and chopped them “bite sized”. You can also do this with sweet potatoes and sweet potatoes are delicious roasted!
I found this to be the easiest way to cut them in uniform pieces…
And then I laid the two sliced pieces flat part down on the board and cut them the other direction…
Drizzle some olive oil or avocado oil (my new favorite) in the bottom of a baking dish and toss the potatoes in the oil to coat. Season generously with salt, pepper, garlic powder, and your favorite seasonings.
Roast in a preheated oven at about 375 for about 30 minutes. Once they are tender you can turn on the “broil” for several minutes to crisp up the top.
What you do with them from here is up to you! Drizzle them with ketchup, hot sauce, BBQ sauce, parmesan cheese….the sky is the limit! They also are fabulous reheated with some eggs and meat in the morning!
