Quesadillas? Unlike my husband I did not grow up eating them as a child and so I never think to make them. When I think of the average quesadilla it is oozing cheese and is really really greasy…yucky. Maybe that is just the way that I have made them and some experts can weigh in and tell me how to make them right? Put that image aside and it’s time to class it up with some fresh and delicious ingredients that will make you turn away from a boring sandwich and start making your own customized and creative quesadillas!
I first got this idea from a Cooking Light magazine from 5 years ago and I made it frequently at one time but then forgot about it for a while. But it is now a “comeback quesadilla” and will be on my rotation regularly. Especially once I start making my own tortillas. Yummy!
But for right now, it’s a storebought flour tortilla loaded up with some seriously good ingredients. It is a perfect meal for some leftover chicken or steak and just about any kind of fruit you have on hand (strawberries, peaches, mangos etc) and add in some monteray jack or motzerella cheese, red onion, and fresh cilantro and it is delicious! Especially dipped into my honey and lime greek yogurt dip. Yum!
Don’t forget to make the dip! It makes the meal!
