This recipe is what made me fall in love with salmon! Tender, flaky, and seasoned with lemon zest, salt, pepper, and a dash of sweetness, this salmon is delicious! If you don’t think you like salmon, don’t give up on it until you have given this recipe a try! If you already love salmon, this recipe will elevate your love to new heights! This also is one of my easiest meals with a quick cooking time and minimal cleanup.
I like to buy a big side of salmon like this from Costco. They actually carry wild caught salmon during certain seasons, so if you are blessed to have a Costco close by, keep your eyes open for it because it is delicious and more affordable than at a grocery store.
While preheating the oven to 375, season the salmon with a sprinkling of salt, pepper, and about 2 teaspoons of coconut palm sugar.
I love this stuff as a healthier sugar option in my baking and cooking. It has a lovely toasted flavor to it and is perfect on this salmon. I buy mine on amazon.
Next, zest some lemon over the top…
Now that the salmon is seasoned, prepare a baking sheet by lining it with either parchment paper or foil and transfer the salmon to that pan.
Bake at 375 for about 10 minutes and then turn the oven onto broil and place the salmon about 4-6 inches under the broiler and broil it for 4 minutes or more, or until the top is nicely crisp and toasted. Ovens can vary in temperature and time needed, so be sure to set a timer and keep an eye on yours. Do not walk away from the oven!
You want it to look like this… lovely color on the top and the salmon should flake when you gently pull a fork through it.
