Craving some Indian food? Try this tender chicken marinated in yogurt, seasoned with exotic spices, and served swimming in a spicy tomato sauce. Learn how to make this dish at home and impress your dinner guests!
All you need is some plain yogurt and some fragrant cumin, cinnamon, cayenne, ginger, salt and pepper, and some fresh lemon juice…
Cut up some chicken breasts bite sized and throw them in the yogurt. Cover it with a lid or some plastic wrap and put in the fridge and marinate for 1 hour or more. Time to put your feet up and watch a movie…or if you are like me, time to see what the toddler is doing in the other room and why he is so quiet….quiet makes me very suspicious because that is when bad things are happening…. like crayons on the wall, or an interesting experiment with water all over the living room…
Once the chicken is marinated you have several options for cooking: You can put it on skewers and grill it, place it on a pan and cook it in the oven (like I did), or you could cook it in a skillet on the stove top. Either method will work just fine. I baked mine in the oven until it was cooked through.
Next, cook up a diced jalapeno and some minced garlic in lots of butter.
Once it is fragrant, add in a can of tomato sauce, some salt, cumin, paprika, and heavy cream (or some lovely cream off of the top of your raw milk jar, or try some coconut milk for a dairy free option). Cook for about 20 minutes until the sauce has reduced and thickened. Add the chicken back into the pan and simmer until it is heated through.
Serve over white rice, or steamed or roasted cauliflower would be a great option as well! Don’t forget the cilantro and some crushed red pepper flakes. And if you made it a little too spicy, a dollop or two of greek yogurt on top will help to cool the burn! Enjoy!
