Fruit in a salad? Yes, please! This is by far my very favorite salad. Spinach, berries, nuts, cheese! Pretty much my favorite ingredients all in one big bowl of goodness! My whole family will gladly eat this up and it is a great salad for company or for a holiday meal. The fun thing about this salad is that you can switch out ingredients based on whatever you have available. I have done any form of berry from strawberries, raspberries, blueberries, and my sister was just telling me about a similar salad with watermelon which I have not experimented with yet. Fruit adds flavor and sweetness and makes this salad delicious.
With nuts I have done a variety, but pecans are my favorite when I have them on hand, and ALWAYS toast your nuts! It brings out the nutty flavor and gives them some nice bite. I have also on occasion added in canned or fresh orange slices, dried cranberries, and my favorite ingredient (I didn’t have any when I made it today) is prosciutto. Prosciutto (an italian thin bacon) toasted crispy and then crumbled on top gives a nice salty savory kick that nicely contrasts with the sweetness. I use my toaster oven by putting some foil over my tray and then laying a few thin slices of prosciutto and toasting it for about 5 minutes until nice and crisp, or you could accomplish the same thing in your oven. Whatever fruits and toppings you include, my homemade honey mustard dressing drizzled over the top is divine and gives it a delicious tangy topping that will make it your favorite salad too!
Prepare your greens….
Toast your nuts…
Slice those strawberries….
Peel, seed, and slice up some cucumber….
Slice (or chop) that red onion….
And crumble up some feta….
And don’t forget the delicious Honey Mustard Dressing
I just ate and this is making me hungry again!
And if you have prosciutto or bacon- crisp it up and throw it on top! YUM!
