Muffins are a must in my home because they are an easy and portable quick breakfast. Whether you are gluten free, you want to experiment with gluten free, or you have friends who are gluten free, give this a try and you will not be disappointed!
Bananas are a staple in my house! They are inexpensive, yummy, and make a great portable snack- as long as you protect them during travels so they don’t end up mushy and bruised. But speaking of mushy and bruised bananas; we all end up with them at some time or another and I’m venturing to guess that we all could use some great ways to use up the squished and otherwise unappealing bananas on our counter. My kids won’t touch them if they are bruised or turning brown, and even though they are great additions to smoothies or could be frozen for later use, I love having them not only out of sight and out of mind, but also transformed from their mushy state into something delicious. It’s a good feeling! Banana bread or banana muffins are my favorite way to use up the smooshed “nana’s” on the counter.
There are so many recipes out there and I feel like I’ve tried them all. I’ve made paleo banana bread, banana bread with sour cream (that one was yummy!) and pretty much every other recipe out there. This is just a great basic banana muffin that is easy and requires no crazy ingredients or prep. Give it a try and let me know what you think!
Do you have a bunch of these on your counter right now? The good thing about aged bananas is that they become much sweeter as they ripen and will mean you can add less sugar to the recipe, which is a very good thing!
First thing- mash those bananas
Second, measure out your dry ingredients
Cream together your butter and sugar
Add in the vanilla and eggs (the egg substitute I use is 1 T flax soaked in 3 T water for each egg). This is my homemade vanilla…mmmmm does it smell good!
Next, take turns adding in 1/2 of the bananas and then 1/2 of the flour until it is all combined.
Then drop in some chocolate chips… because chocolate makes everything yummy! Doesn’t this look like cookie dough right now?
Drop in your muffin tin and bake away!
